Bread Baking

I think everyone is at such stage at least once in their life where they decide to do something new and different.  The lack of bread at home gave me an idea to bake one myself.  Unfortunately I also lacked the important ingredients: the bread flour and yeast.
Next time I sent my husband shopping I asked him to pick up the ingredients I needed.  Now with extra butter, bread flour, yeast and eggs I was ready to make bread from the recipe I found in a baking book.

1 egg
1 egg yolk
1 cup lukewarm water
4.5 cup bread flour
1.5 tsp of salt
2 tsp of sugar
1 tsp of yest
2 Tbsp of butter

I worked my way through the recipe, however the bread came out very dense. It was tasty and baked well, but it did not resemble the store bought bread.
That did not discouraged me to try again.  This time around I tried to make a soda bread from the same baking book.

4 cups of all-purpose flour
1 tsp salt
1 tsp baking soda
1.75 cups buttermilk

Lack of buttermilk did not discourage me as I found information that buttermilk can be obtained by mixing a Tbsp of vinegar or lemon juice with 1 cup of 2% milk.  After making the mixture with lemon juice it did not look any different, but I continued with making the bread.
The bread did not raise much in the oven and came out almost rock hard. I have to cut it in thin slices and dry it to use with a dip or with cheese.

I gave up on the bread recipes from the book.
Third time the charm I said! This time around I just followed the recipe on the bread flour itself.


1 cup of warm water
1.1 Tbsp of sugar
2.25 tsp of yeast
1 cup of warm milk
2 Tbsp of butter
2 tsp of salt
5.5 cups of bread flour

After making the dough it took about 1/3 of the bowl, but after about 2 hours of standing and raising, the bread almost spilled out onto the counter.  It also raised a lot while sitting in the pans.  The dough was much softer and fluffier than the breads I made before.
It grew almost double when baking as well.
Because the recipe was saying that it makes 2 loafs, I used my metal non-stick pan and I also had to use my glass pan for the lack of correct baking tools.



Unfortunately the bread had to cut out from the glass pan even after greasing it.
Lesson learned: I need another baking non-stick pan :)

The bread?  Came out yammy!

Go South

Before the summer ends there is always the nostalgia about the warm weather and sun.  One then feels about going south.  Some people go to Cuba or Bahamas to feel the heat when the nights are getting longer. This trip was about going to a Southern most part of Canada. First stop - Pelee Point.  The southern most point of mainland Canada extending into the lake Erie. We drove first all the way to the visitors center and enjoyed a picnic lunch. Then we set off walking from there to the tip. Rome - Mississauga Festival Choir Europe Tour 2017

All roads lead to Rome. First settling in just outside of the Vatican City and then an evening stroll through the streets.  Crossed via Ponte Sant'Angelo to the other side of the Tiber River. Snapped a pic of Ponte Vittorio Emanuele II and the St. Peter's Basilica in the background. The tall banks of the Tiber River were created to ensure the city is safe from flooding.  The water levels of the river were at all time low. One of the reasons we decided not to take a river cruise later during our stay. Piazza Navona and the Fontana dei Fiumi representing 4 rivers of the 4 continents. (Australia is missing possibly because no Papal authority there at the time.) On the way back, the view of the Castel Sant'Angelo where the Pope could take refuge in case of an attack (Originally a malsoleum of a Roman Emperor Hadrian) The next day of course a trip to the oldest part of the city... the ancient ruins of the Colosseum...
